How to Get a Perfect Sear with Your Equitherm Cookware
Achieving a perfect sear on your Equitherm hybrid cookware is all about technique and timing. Follow these steps to get that beautiful, caramelized crust on your meats and vegetables:
1. Preheat the Pan
Start by preheating your Equitherm hybrid cookware over medium-high heat. Allow the pan to heat up for a few minutes until it’s evenly hot. You can test the heat by sprinkling a few drops of water on the surface – they should sizzle and dance around the pan - if it bubbles it's not quite ready.
2. Pat Dry Your Ingredients
Ensure your meat or vegetables are dry before placing them in the pan. Use paper towels to pat them dry, as excess moisture can prevent proper searing and cause stewing instead.
3. Season Generously
Season your ingredients with salt and pepper or your preferred seasoning. A good amount of seasoning helps to create a flavourful crust.
4. Add Oil
Add a small amount of high smoke point oil, such as grapeseed, avocado oil or animal fats to the preheated pan. Swirl the oil to coat the surface evenly.
5. Place Ingredients in the Pan
Carefully place your meat or vegetables in the pan, ensuring they are not overcrowded. Overcrowding can lead to uneven cooking and stewing. Leave enough space between each piece for proper searing.
6. Avoid Moving the Ingredients
Once the ingredients are in the pan, resist the urge to move them around. Let them cook undisturbed for a few minutes to develop a golden-brown crust. For meats, this usually takes about 3-4 minutes per side, depending on the thickness.
7. Flip and Sear the Other Side
After achieving a good sear on one side, flip the ingredients using tongs or a spatula. Sear the other side for an additional 3-4 minutes or until the desired crust is achieved.
8. Check for Doneness
For meats, use a meat thermometer to check for doneness. The internal temperature should reach the desired level for your specific type of meat (e.g., 65°C for medium-rare steak).
9. Rest the Meat
If you’re searing meat, allow it to rest for a few minutes after cooking. This helps the juices redistribute, resulting in a more tender and flavourful dish.
By following these steps, you can achieve a perfect sear on your Equitherm hybrid cookware, enhancing the flavour and texture of your dishes. Happy cooking!
